Summer Spiced Ribs
  • 3 lb pork ribs (cut apart)
  • 1 chopped onion
  • 1/4 c barbecue sauce
  • 1 tsp orange zest
  • 1 tsp lime zest
  • 1/4 c orange juice
  • 2 Tbsp lime juice
  • 2 Tbsp cornstarch
  • salt and pepper, to taste
  1. Broil ribs 10-15 minutes, to brown.
  2. In a bowl, mix onion, sauce, zests, and juices.  Pour over ribs in crockpot.
  3. Cover and cook on low 6-8 hours (or high 3-4 hours).
  4. Whisk cornstarch into sauce, to thicken.  Uncover and cook another 20-30 minutes on high.

Fuggedabboutit Barbecue Chicken
  • 3 lb chicken drumsticks
  • 1 c barbecue sauce
  • 1/3 c peach jam
  • 2 tsp mustard
  1. In a bowl, mix sauce, jam, and mustard.  Pour over chicken in the crockpot.
  2. Cover and cook on low 6-8 hours (or high 3-4 hours).
  3. Uncover and cook on high 20-30 minutes longer, to thicken sauce.
