Good (Better than Ezra)

Have you taken a look at the ingredients list for some of your favorite condiments lately?  About a million ingredients...half of which are unpronounceable.....it just makes me shudder.  
After much research into trying to "health things up" (that would be a hubby-ism), here are some of the easiest recipes around that are also tasty!  Give them a try...and just think about this : you'll know exactly what's in them.


For the Salad...
Ranch Dressing

  • 1/3 c mayo (see recipe below)
  • 1/3 c sour cream
  • 1/4 c buttermilk
  • 2 tsp chopped parsley
  • 2 tsp chopped chives
  • 1 clove minced garlic
  • 1/4 tsp salt


  1. Whisk all ingredients together well.

Mayonnaise

  • 1 egg at room temp
  • 2 tsp apple cider vinegar
  • 1 tsp water
  • 2 tsp mustard (see recipe below)
  • pinch salt
  • 1 c light olive oil


  1. Put all ingredients in a wide mouth quart-sized jar.  
  2. Use an immersion blender in the jar for 60 seconds.  Voila!


For the Cookout...
Mustard

  • 1 c yellow mustard seeds
  • 3/4 c apple cider vinegar
  • 1/4 c water
  • 1/2 tsp turmeric


  1. Put all ingredients in a wide mouth pint-sized jar.  
  2. Let sit three days to let seeds soften.  If it gets dried out, add 1 Tbsp apple cider vinegar before next step.  
  3. Use an immersion blender in the jar for 60 seconds.

Ketchup

  • 7 c peeled and chopped tomatoes
  • 1/2 c chopped onion
  • 1/2 c chopped red bell pepper
  • 2/3 c apple cider vinegar
  • 1/4 c sugar
  • 2 tsp salt
  • 1 cinnamon stick
  • 1/2 tsp allspice
  • 1/2 tsp cloves
  • 1/2 tsp peppercorn
  • 1/2 tsp mustard (see above recipe)
  • 1 bay leaf


  1. Use food processor to combine tomatoes, onion, and pepper.
  2. Bring mixture to boil in large saucepan.  Reduce and simmer 30 min.
  3. Combine spices and bay leaf in cheesecloth and tie tightly.
  4. Add vinegar, sugar, and salt to mixture.  Drop in cheesecloth bag.
  5. Simmer 90 minutes.  Remove cheesecloth bag.
  6. Put into canning jars and either process jars or place into fridge.


For the Sweet Tooth...
Hot Fudge

  • 1 c butter
  • 1/3 c cocoa powder
  • 3 c sugar
  • 12 oz evaporated milk
  • 1 tsp vanilla
  • 1/2 tsp cinnamon


  1. Mix butter, cocoa, sugar, and milk in pan on medium.  Boil 6-8 minutes, stirring.
  2. Remove from heat and stirin vanilla and cinnamon.
  3. Store in fridge.

Maple Syrup

  • 1 c water
  • 2 c sugar
  • 1 tsp maple extract


  1. Mix ingredients in pan on medium-high.  Boil 5 minutes.  Serve hot.
