Slow Cook February

Serve Up some Love!

Mulled Red Wine
The perfect complement to a night of romance!
  • 2 bottles red wine
  • 2 c orange juice
  • 2 c pineapple juice
  • 1 sliced lemon
  • 1 sliced orange
  • 2 cinnamon sticks
  • 4 whole cloves


  1. Wrap cinnamon and cloves in a piece of cheesecloth and tie with twine.
  2. Put all ingredients, including spice bag, into crockpot and cook on low for 4 hours.  
  3. Remove spice bag and fruit slices.

Italian Wedding Soup
A tasty starter; plus it says 'wedding'...

  • 1/2 chopped onion
  • 1/2 sliced onion
  • 1 egg
  • 1/4 c dry bread crumbs
  • 2 tsp italian seasoning
  • 1 lb ground beef
  • 2 tsp olive oil
  • 1 fennel bulb
  • 30 oz low-sodium broth
  • 3 1/2 c water
  • 6 cloves sliced garlic
  • 1/2 tsp black pepper
  • 3/4 c orzo
  • 5 c shredded fresh spinach
  1. Mix chopped onion, egg, crumbs, and 1 tsp italian seasoning wiht ground beef.  Shape into meatballs and brown in skillet.  
  2. Slice fennel bulb into thin wedges (discard top).
  3. Add all ingredients except orzo and spinach to crockpot and cook on low 8-10 hours (high 4-5 hours).
  4. Add orzo and cook on high 20-30 minutes.  
  5. Stir in spinach, and serve.

Sweetheart Bread Pudding
A sweet ending to a lovely night!
  • 2 eggs
  • 1/4 c sugar
  • 1/4 c almond extract
  • 1 c milk
  • 3 c bread cubes
  • 2 oz chopped baker's chocolate
  • 1/3 c dried cherries
  • 1 c warm water
  • 3 Tbsp powdered sugar
  • 2 Tbsp greek yogurt
  • 1 tsp milk
  • 3 Tbsp sliced almonds
  1. Prep ahead : Spread bread cubes onto baking pan and bake, uncovered, 10-15 minutes at 300 F.  Allow them to cool.
  2. Use a baking dish that is smaller than your crockpot (you're going to be rigging up a double boiler slow cooker) for the mixture.
  3. In this second baking dish, mix eggs, sugar, extract, salt, and 1 c milk.  Stir in bread crumbs (cooled), chocolate, and cherries.  
  4. Cover and cook on low 3-4 hours.  Remove second dish from crockpot and allow to cool.
  5. Combine sugar, yogurt, 1 tsp milk in separate bowl and whisk together to make icing.  Sprinkle with almond slices.
