The carrots are finally ready to be harvested! (And just in time, too, since we're leaving next week for a very long trip...) We ended up with about twenty wonky-looking carrots, but they taste good. We decided to try out some new recipes, and tweak them along the way, to enjoy our home-grown root veggies.
As a side dish with dinner, we are making our own Carrot Salad. You can find the oh-so-easy recipe below.
- 1/2 cup mayo
- 2.5 Tbsp honey
- 1/2 cup raisins
- 8 chopped carrots
- 1/2 chopped apple
Mix together honey & mayo, then stir in carrots and apples. Stir the raisins in last.
Makes a tasty side dish!
