Aging Orange (Vandals)

The carrots are finally ready to be harvested!  (And just in time, too, since we're leaving next week for a very long trip...)  We ended up with about twenty wonky-looking carrots, but they taste good.  We decided to try out some new recipes, and tweak them along the way, to enjoy our home-grown root veggies.
As a side dish with dinner, we are making our own Carrot Salad.  You can find the oh-so-easy recipe below.
Carrot Salad
  • 1/2 cup mayo
  • 2.5 Tbsp honey
  • 1/2 cup raisins
  • 8 chopped carrots
  • 1/2 chopped apple
Mix together honey & mayo, then stir in carrots and apples.  Stir the raisins in last.
Makes a tasty side dish!

For this cooking project, we used our Pampered Chef Food Chopper and 2-Cup Prep Bowls.

Did you know that there is a National Carrot Day?  They'll make a holiday for just about anything.  I dare you to watch the video below without cracking a smile...  Have a wonderful day!
